Trypsin is a serine protease found in the digestive system of vertebrates. It is produced as trypsinogen in the pancreas and cleaves peptide chains at the carboxyl side of lysine and arginine amino acids, except when followed by proline. Trypsin is secreted into the duodenum, where it hydrolyzes peptides into amino acids. This is necessary for protein absorption since peptides are still too large to be absorbed through the lining of the ileum. Trypsin has an optimal pH of 8 and operates at a temperature of 37°C. In cystic fibrosis, there is a deficiency in the transport of trypsin and other digestive enzymes from the pancreas. Trypsin is widely used in biotechnological processes due to its abundance in the pancreas and ease of purification.
